- 2 medium boneless chicken breast
- 4 (10-inch) large flour tortillas
- 2 (mixed colors) sliced bell peppers
- 1 sliced onion
- 1.5 cups shredded Mexican cheese
- 2 tsp fajita seasoning
- 2 tbsp oil

👨🍳 Instructions
- 1Slice chicken into thin strips and toss with fajita seasoning
- 2Sauté chicken in oil over high heat 5-6 minutes until cooked through; set aside
- 3In the same pan, sauté peppers and onion 4-5 minutes until softened and lightly charred
- 4Mix chicken back in with the peppers
- 5Place one tortilla in a clean pan over medium heat
- 6Spread cheese on one half, pile the chicken-pepper mix on top, fold tortilla over
- 7Cook 2-3 minutes per side until golden and cheese is melted
- 8Cut in half and serve with sour cream
