- 4 (12-inch) large flour tortillas
- 1 can drained canned black beans
- 1.5 cups cooked white or Mexican rice
- 1 cup shredded cheddar or Mexican cheese
- 2 tbsp taco seasoning
- 4 tbsp sour cream
- 1/2 cup salsa
- 1 cup shredded lettuce

- 1Brown ground beef in a skillet over medium-high heat, drain excess fat
- 2Add taco seasoning with 1/4 cup water, stir and simmer 3 minutes
- 3Warm beans in a small pan with a pinch of salt
- 4Warm tortillas in a dry pan or microwave until pliable
- 5Layer in the center of each tortilla: rice, beans, seasoned beef, cheese, lettuce
- 6Add a dollop of sour cream and a spoonful of salsa
- 7Fold sides in, then roll from bottom to top, pulling tight
- 8Optional: toast seam-side down in a pan for 2 minutes for a crispy exterior
