- 1Blend diced tomatoes, jalapeño, garlic, and cumin into a chunky salsa
- 2Simmer salsa in a small pan for 5 minutes until thickened; season with salt
- 3Warm black beans in another pan with a pinch of cumin and salt
- 4Fry tortillas in a thin layer of oil for 1 min per side until crisp and golden
- 5In the same pan, fry eggs to your liking (sunny-side up is traditional)
