1 Preheat oven to 350°F; line two baking sheets with parchment
2 Pulse flour, butter, cayenne, paprika, and 1/2 tsp salt in a food processor until it resembles sand
3 Add shredded cheddar and pulse until the dough just comes together (it will look crumbly — squeeze a handful and it should hold)
4 On a lightly floured surface, roll dough to 1/4-inch thickness
5 Cut into strips about 4 inches long and 1/2 inch wide; transfer to baking sheets
6 Bake 18–20 minutes until light golden — watch carefully, they go from golden to burnt quickly
7 Cool completely on the pan; they crisp as they cool
