- 1Place eggs in a single layer in a saucepan; cover with cold water by 1 inch
- 2Bring to a full boil over high heat; turn off heat, cover, and let stand exactly 12 minutes
- 3Transfer to an ice bath for 10 minutes, then peel under running water
- 4Halve eggs lengthwise; pop yolks into a bowl
- 5Mash yolks with mayo, mustard, relish, a pinch of salt, and a tiny pinch of cayenne until perfectly smooth
