- 1Divide beef into 2 balls (do not season yet)
- 2Heat a cast iron skillet or flat griddle over high heat until very hot
- 3Add onion slices to the pan, let sear 1 min
- 4Place beef ball on top of onions, immediately smash flat with a spatula
- 5Season generously with salt and pepper; cook 2–3 min until edges are lacy
- 6Flip, add cheese, cook 1 more min
