- 1Simmer ham hock in 6 cups water with onion and garlic for 20 min
- 2Strip collard greens from stems; stack, roll, and slice into ribbons
- 3Add greens to the pot — they will wilt down significantly
- 4Season with salt, pepper, a pinch of red pepper flakes
