- 1Pat roast dry; season all over with salt and pepper
- 2Sear in a Dutch oven over high heat 3–4 min per side until deeply browned
- 3Remove; add onion and garlic, cook 2 min
- 4Add 2 cups beef broth, Worcestershire sauce, and fresh thyme sprigs
- 5Nestle roast back in; surround with potatoes and carrots
- 6Cover tightly; cook in oven at 325°F or on stovetop on very low for 45–50 min
- 7Shred or slice and serve in the braising juices
