  1. 1Peel membrane off the back of ribs using a paper towel for grip
  2. 2Mix paprika, brown sugar, garlic powder, onion powder, cumin, pepper, and cayenne
  3. 3Rub spice mix all over both racks — generously on all sides
  4. 4Wrap each rack tightly in foil and refrigerate 1 hour or overnight
  5. 5Bake foil-wrapped ribs at 275°F for 3 hours until tender
  6. 6Remove from foil, brush with BBQ sauce on both sides
  7. 7Broil (or grill) 5 minutes per side until sauce caramelizes and edges char
  8. 8Rest 5 minutes, slice between bones, and serve
