  1. 1Char eggplant directly over gas flame or under broiler until skin is blackened and flesh is soft, 10-15 minutes
  2. 2Peel charred skin, mash the flesh and set aside
  3. 3Heat oil, sauté garlic and onion until golden
  4. 4Add tomatoes, cumin, turmeric, and chili powder, cook until soft
  5. 5Add mashed eggplant, mix well, cook 5 minutes
  6. 6Serve with roti, topped with raw onion rings
