- 1Char eggplant directly over gas flame or under broiler until skin is blackened and flesh is soft, 10-15 minutes
- 2Peel charred skin, mash the flesh and set aside
- 3Heat oil, sauté garlic and onion until golden
- 4Add tomatoes, cumin, turmeric, and chili powder, cook until soft
- 5Add mashed eggplant, mix well, cook 5 minutes
- 6Serve with roti, topped with raw onion rings
