- 1.5 tsp salt

- 1Heat oil in a heavy pot, add cumin, bay leaves, and cardamom — sizzle 30 seconds
- 2Add onions and cook over medium heat, stirring often, until deep golden, 12 minutes
- 3Add ginger-garlic paste and cook 2 minutes
- 4Add chicken pieces, season with salt, brown on all sides, 5 minutes
- 5Add rinsed rice, stir to coat in the aromatics for 1 minute
- 6Add 3.5 cups water, bring to a boil, then cover tightly and cook on low 18 minutes
- 7Rest 5 minutes off heat, fluff with a fork, garnish with cilantro
