1/2 cup, rinsed toor dal (split pigeon peas)
2, chopped tomatoes
1 cup frozen mixed vegetables
2 tsp sambar powder
1 tsp mustard seeds
8 curry leaves
1 tsp (sub lemon juice) tamarind paste
1 tbsp vegetable oil

👨🍳 Instructions
1 Pressure-cook toor dal with 1.5 cups water until soft, about 15 minutes (or microwave 12 min)
2 In a pot, heat oil, add mustard seeds, curry leaves, let splutter
3 Add tomatoes and vegetables, cook 5 minutes
4 Add mashed dal, sambar powder, tamarind, and 1 cup water — simmer 10 minutes
5 Pour idli batter into greased idli molds and steam 12 minutes until a toothpick comes out clean
6 Serve idlis in a bowl, ladle sambar over the top
