  1. 1Pressure-cook toor dal with 1.5 cups water until soft, about 15 minutes (or microwave 12 min)
  2. 2In a pot, heat oil, add mustard seeds, curry leaves, let splutter
  3. 3Add tomatoes and vegetables, cook 5 minutes
  4. 4Add mashed dal, sambar powder, tamarind, and 1 cup water — simmer 10 minutes
  5. 5Pour idli batter into greased idli molds and steam 12 minutes until a toothpick comes out clean
  6. 6Serve idlis in a bowl, ladle sambar over the top
