- 1Rinse rice until water runs clear, soak 15 minutes if time allows
- 2Heat ghee in a heavy pot, splutter cumin seeds with bay leaf and cardamom
- 3Add drained rice and toast in ghee for 2 minutes
- 4Add water and salt, bring to boil, then reduce heat to low
- 5Cover tightly and cook 12 minutes, let rest 5 minutes, then fluff and serve
