  1. 1Make pakora batter: mix gram flour, sliced onion, cumin, turmeric, salt, and enough water to make thick batter
  2. 2Deep fry tablespoon-sized dollops until golden, drain on paper towels
  3. 3Whisk yogurt with 2 cups water, turmeric, and chili powder
  4. 4Heat 1 tbsp oil, splutter cumin and fenugreek seeds
  5. 5Slowly add yogurt mixture, whisk constantly to prevent curdling
  6. 6Simmer 10 minutes, add pakora, cook 5 more minutes, garnish with cilantro
