- 1Peel lauki, remove seeds, cut into 1-inch cubes
- 2Heat oil, splutter cumin, then add diced onion
- 3Add turmeric and chili powder, stir 30 seconds
- 4Add lauki cubes, mix well, add 1/4 cup water
- 5Cover and cook 10 minutes until tender
- 6Add diced tomatoes, cook 5 more minutes, add salt and serve
