  1. 1Cut tofu into 1-inch cubes and gently simmer in salted water 2 min, drain
  2. 2Cook pork in oil until browned, add garlic and ginger
  3. 3Add chili bean paste, stir-fry 1 min
  4. 4Add broth and soy sauce, bring to a simmer
  5. 5Slide in tofu, simmer 5 min, thicken with cornstarch slurry, top with Sichuan pepper
