  1. 1Press tofu dry, toss with cornstarch and a pinch of salt
  2. 2Pan-fry tofu in hot oil until golden on all sides, set aside
  3. 3Sauté dried chiles and garlic in the same pan 1 minute
  4. 4Add bell pepper, cook 2 minutes
  5. 5Mix soy sauce, rice vinegar, a tsp of sugar, and 1 tsp cornstarch with 2 tbsp water
  6. 6Add tofu back, pour sauce over, toss well with peanuts and green onions
