  1. 1Toss beef slices with cornstarch and a pinch of salt
  2. 2Whisk oyster sauce, soy sauce, broth, and remaining cornstarch for sauce
  3. 3Sear beef in batches over very high heat, 1-2 min per side, set aside
  4. 4Stir-fry garlic and ginger 30 seconds, add broccoli with a splash of water
  5. 5Cover and steam broccoli 2 minutes
  6. 6Return beef, pour sauce over, toss and cook until sauce thickens. Serve over rice
