- 3 medium, boiled and mashed potatoes
- 1 medium, sliced onion
- 1 tsp mustard seeds
- 1/2 tsp turmeric
- 10 (sub dried or omit) curry leaves
- 1, chopped green chili
- 2 tbsp vegetable oil

- 1Make filling: heat oil, splutter mustard seeds and curry leaves, add onion and chili, cook 5 minutes
- 2Add mashed potatoes, turmeric, salt — stir well and keep warm
- 3Heat a non-stick pan on medium-high, pour a ladle of batter and spread in a thin circle
- 4Drizzle a few drops of oil around the edges, cook until golden and crisp, 2-3 minutes
- 5Place a scoop of potato filling on one half, fold over
- 6Serve immediately with coconut chutney or ketchup
