  1. 1Wash and chop methi leaves finely, toss with a little salt and let sit 10 minutes, then squeeze out moisture
  2. 2Mix flour, methi, yogurt, all spices, oil, and enough water to form a soft dough
  3. 3Divide into 8 balls, roll each very thin (thepla should be translucent)
  4. 4Cook on a hot dry tawa, pressing edges, until golden spots appear on both sides
  5. 5Brush with oil while cooking for extra softness. Serve with pickle and yogurt
