- 2 medium tomatoes
- 2 tbsp (sub garam masala + chili powder) pav bhaji masala
- 2 tbsp butter
- 8 dinner rolls
- 1 lemon
- 2 tbsp fresh cilantro

👨🍳 Instructions
- 1Heat butter in a wide pan, add diced onion and cook until soft, 5 minutes
- 2Add diced tomatoes and pav bhaji masala, cook until thick, 5 minutes
- 3Add all cooked vegetables, mash together vigorously with a potato masher
- 4Add a splash of water, stir and simmer 5 minutes — the bhaji should be thick and saucy
- 5Toast rolls with butter in a separate pan
- 6Serve bhaji topped with raw diced onion, cilantro, and a squeeze of lemon alongside toasted rolls
