  1. 1Rinse flattened rice in a colander under running water, set aside to drain
  2. 2Heat oil, splutter mustard seeds, add curry leaves and green chili
  3. 3Add diced potato and peanuts, cook 5 minutes
  4. 4Add onion, turmeric, and a pinch of sugar, cook until onion softens
  5. 5Add drained rice, mix gently, add salt and cover 3 minutes
  6. 6Finish with lemon juice and cilantro, serve immediately
