- 1 medium potato
- 3 tbsp peanuts
- 1 small onion
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric
- 1 green chili
- 1 tsp sugar
- 1 tbsp lemon juice
- 2 tbsp fresh cilantro

👨🍳 Instructions
- 1Rinse flattened rice in a colander under running water, set aside to drain
- 2Heat oil, splutter mustard seeds, add curry leaves and green chili
- 3Add diced potato and peanuts, cook 5 minutes
- 4Add onion, turmeric, and a pinch of sugar, cook until onion softens
- 5Add drained rice, mix gently, add salt and cover 3 minutes
- 6Finish with lemon juice and cilantro, serve immediately
