- 2 medium, diced tomatoes
- 1/2 cup coconut milk
- 1/2 tsp turmeric
- 1.5 tsp garam masala
- 1 tsp chili powder

- 2 tbsp vegetable oil
- 2 tbsp fresh cilantro

- 1Toss shrimp with turmeric and a pinch of salt, set aside
- 2Heat oil in a skillet, add onion and cook until golden, 7 minutes
- 3Add ginger-garlic paste and cook 2 minutes
- 4Add tomatoes, garam masala, and chili powder — cook until thick, 5 minutes
- 5Add coconut milk, stir and simmer 3 minutes
- 6Add shrimp and cook just until pink and curled, 3-4 minutes — do not overcook
- 7Garnish with cilantro and serve over rice
