- 1If sprouting mung beans: soak overnight, drain, rinse, and leave in a jar for 1-2 days until tails appear — or use canned lentils drained and rinsed
- 2Combine sprouted beans, diced tomato, onion, and cucumber in a bowl
- 3Add lemon juice, chaat masala, and chili powder
- 4Toss well and taste — adjust lemon and salt
- 5Top with fresh cilantro and serve immediately or chill up to 2 hours
