- 3 large, finely chopped tomatoes
- 1 medium, diced onion
- 1 tsp mustard seeds
- 10 curry leaves
- 1/2 tsp turmeric
- 1 tsp chili powder
- 2 tbsp vegetable oil

👨🍳 Instructions
- 1Heat oil in a pot, add mustard seeds and wait to pop, then add curry leaves
- 2Add diced onion and cook until translucent, 5 minutes
- 3Add tomatoes, chili powder, and turmeric — cook until tomatoes are completely broken down, 8 minutes
- 4Add rinsed rice, stir to coat in tomato masala for 1 minute
- 5Add 2.5 cups water, bring to a boil, then cover tightly and cook on low heat 15 minutes
- 6Rest 5 minutes, fluff gently with a fork and serve with raita or pickle
