- 1.5 cups basmati rice
- 2 cups mixed vegetables (carrot, peas, beans, potato)
- 2 large onion
- 1/4 cup yogurt
- 2 tsp garam masala
- 1 tsp cumin
- 1/2 tsp turmeric
- 1/4 tsp saffron or turmeric water
- 3 tbsp ghee
- 1/4 cup mint leaves
- 4 cloves garlic

👨🍳 Instructions
- 1Soak rice 20 minutes. Fry sliced onions in ghee until deeply golden, set aside
- 2Sauté garlic, add vegetables with cumin, turmeric, and half the garam masala
- 3Add yogurt to vegetables, cook 5 minutes
- 4Layer in a pot: vegetables at bottom, drained rice on top, saffron water and fried onions
- 5Seal pot with foil and lid, cook on lowest heat 25 minutes
- 6Fluff and serve, garnished with mint
