  1. 1Soak rice 20 minutes. Fry sliced onions in ghee until deeply golden, set aside
  2. 2Sauté garlic, add vegetables with cumin, turmeric, and half the garam masala
  3. 3Add yogurt to vegetables, cook 5 minutes
  4. 4Layer in a pot: vegetables at bottom, drained rice on top, saffron water and fried onions
  5. 5Seal pot with foil and lid, cook on lowest heat 25 minutes
  6. 6Fluff and serve, garnished with mint
